Holà! I'm Josie Paredes. I am a Mexican American Chef with 30 years of professional culinary experience. I've been the Executive Chef at many fine dining establishments in Austin, and I currently own and operate two taqueria style food trucks.

As you can tell,  I have a passion for making people happy with food. That passion is what continually inspires me to convert local ingredients into delicious, flavorful meals.

My food is evocative. The flavors you will experience while eating my food are a byproduct of my unique experiences growing up in South Texas, combined with my mother's perspective growing up in Southern Central Mexico. I draw upon this background when I cook to create stunning dishes that honor interior Mexico's unique flavors and pay homage to my heritage.
